One-Skillet Pasta & Kale Dish That I'd Pay Money For In A Restaurant


This pasta dish is easy, full of flavor and wholesome ingredients, and if it was offered in a restaurant, I'd pay money for this one.


Serves 2-3


Ingredients:

1 tsp of the best quality extra virgin olive oil you can get (omit if oil-free)

Some diced onion

Some diced baby bella and shiitake mushrooms

Some de-stemmed and chopped Lacinato (AKA Tuscan or Dinosaur) kale - or your favorite greens

1 tsp minced garlic (about 2 cloves)

A few chopped sundried tomatoes (I used ones packed in oil and use paper towels to blot most of the oil from them)

Hot pepper spread or red pepper flakes to taste, optional

A couple teaspoons of capers and a drizzle of the caper brine

1 package of microwavable pasta (about 2 servings in a package), or desired amount of cooked pasta

A sprinkle of Italian seasoning

Salt and pepper to taste


In a non-stick skillet over medium heat, add the oil, onion and mushrooms. Sauté till onion is translucent and mushrooms start to brown, about 5 minutes or so.


Reduce heat to medium low and add the chopped kale. Saute for a few minutes. Add the garlic and saute another minute.


Add sundried tomatoes and hot pepper spread. Turn the heat off and toss everything together in the pan to heat the tomatoes and hot pepper spread through.


Add the capers and brine and toss together.


Add the pasta and toss together for about 1 minute.


Season with Italian seasoning, salt and pepper, toss together, and serve.
