Apple Fennel Salad with Lime Vinaigrette

In this YouTube video I show an apple fennel salad with lime vinaigrette, here's the recipe:
1 mini organic Gala apple (or 1/2 of an apple, your preference but I prefer a sweeter apple for this, it blends nicely with fennel) - cut into matchsticks
1/2 bulb fennel, cut into matchsticks
1 stalk celery, finely diced
Fennel fronds to garnish
Vinaigrette:
1 tsp extra virgin olive oil (omit if you are oil-free)
Juice from 1 lime
1/2 T maple syrup, plus a dash more if needed, to taste
1/2 T apple cider vinegar
Pinch of salt
1/2 tsp Dijon mustard
Cut your apple into matchsticks.
Cut off the stalks/fronds sections of the fennel from the bulb part. Reserve some fronds for garnish. Cut the root end of the bulb off, cut the bulb in half. Cut one of the fennel bulb halves into matchsticks. You can freeze the fennel stalks and fronds for making vegetable stocks if you wish!
Place your ingredients in a small jar with a lid and shake to blend well.
Toss dressing with apple, fennel, and celery, stir in fennel fronds.
