In honor of the summer solstice and the official start of summer in the Northern hemisphere, here is a creamy dressing that uses beautiful, fresh herbs and has a bright flavor.
Ingredients:
1/2 cup unsweetened plain soy milk, or your favorite unsweetened plain plant milk
3 T hemp hearts
1/4 cup pumpkin seeds
1/4 cup cashews (I used raw unsalted)
A few fresh basil leaves
A few fresh chives
A few sprigs of fresh dill
A small handful (about 1/4 cup) fresh cilantro
About 1/4 tsp or a sprinkle of onion powder
About 1/4 tsp or a sprinkle of garlic powder
Salt to taste
Juice from 1 lime
You can play with the flavors a bit more by adding:
1/2 T maple syrup
1-2 T apple cider vinegar
Blend everything together in a blender.
Add water or plant milk if you would like the dressing a little thinner.
You can use other nuts and seeds and other herbs instead of the ones I used.
Ideas for serving:
As a dressing on tossed salad
As a dressing for grain bowls
As a substitute for mayo in potato or chickpea salad
As a dip for raw veggies and crackers
As a sandwich spread
As a substitute for cashew cream in soups (pay attention to how the flavors will work together though)
Enjoy and happy summer,
~Jeannette
