Edamame Hummus

1 cup cooked pre-shelled edamame

1 T tahini

Dash of ground dried ginger, or 1 tsp peeled and grated fresh ginger

Dash of ground cumin

Juice from 1/2 a lemon

1/2 tsp minced garlic from a jar, or 1 clove minced

1/4 fresh cilantro

1 T extra virgin olive oil (omit if you eat oil-free)

1/4 tsp salt or to taste


1-2 T water plus extra if needed



Combine all ingredients through salt in a food processor. Add 1 T of water at a time to help the mixture blend into a smooth dip.
