Easy Sautéed Bok Choy

Bok choy is a leafy green that can be prepared many ways, from air frying to boiling to sauteeing. In this dish, bok choy is sautéed with mushrooms and a delicious sauce for an easy dish that is flavorful and nutritious.
Ingredients:
Desired amount of bok choy (I used 3 small bunches of baby bok choy), cleaned well and cut into shreds or small pieces
Desired amount of mushrooms, sliced (I used a handful of organic sliced shiitake and baby bella)
2 cloves garlic, minced (or 1 tsp minced garlic from a jar)
1 T minced fresh ginger (or a pinch of ginger powder)
Extra virgin olive oil (omit if you eat oil-free and just use water to saute as needed)
Sauce:
About 2 T rice vinegar (I used unseasoned. If you use seasoned, you may need to add less sweetener).
About 1 tsp tamari, soy sauce or liquid aminos
A pinch of sugar or dash of maple syrup (adjust to taste)
A few drops of toasted sesame oil
Clean the bok choy well. Dirt and debris can hang out in the lower parts of the bunch especially. Cut into shreds or small pieces.
Clean and slice the mushrooms. Mince the garlic and ginger.
Add olive oil to a pan over medium heat. Add the mushrooms and sauté till they cook down.
Add the bok choy, garlic and ginger. Sauté for 3-5 minutes until boy choy wilts and softens.
