Shamrock Smoothie (Whole Food Plant-Based)

In honor of St. Patrick's Day here's my shamrock smoothie, made with whole food plant-based ingredients.
I've had my share of McDonald's shamrock shakes in my life. They come out around this time of year and are only available for a short time. Light green in color, they have a minty flavor, and I've tried to capture that essence in my own plant-based version.
Ingredients:
1 cup of your preferred plant-based milk (I use organic unsweetened soy milk)
Mint flavoring - 1-2 drops of peppermint flavor oil (I use Simply Organic Peppermint Flavor), or peppermint extract, or maybe 1-2 fresh mint leaves
Optional: 1/4 tsp matcha green tea powder
Small handful of baby spinach leaves
Optional: 1/4 cup canned white beans, rinsed and drained
Handful of frozen zucchini
1-2 pitted Medjool dates or desired amount of maple syrup or your preferred sweetener
Optional: tiny pinch of salt
Few drops of vanilla extract
Place milk in blender, then the rest of the ingredients. Blend till smooth and creamy.
