Sweet Potato Chocolate Pudding

Sweet potatoes: You will need to prepare these ahead of time. I used an orange sweet potato (a yam actually), and a white sweet potato (also called Jersey white sweet potato or Hannah yam). White sweet potatoes have even more sweetness than the orange variety. You can use two regular orange sweet potatoes if you don’t have a white one. I roast them by poking holes in them, and baking on a parchment lined baking sheet at 400F for 50-60 minutes. When cool enough to handle, remove the peels, and chill the potatoes.
Cocoa powder: I just used basic cocoa powder but use your favorite.
Maple syrup: I recommend real maple syrup for the best flavor. If you prefer whole food sweeteners, you can try a pitted date or two, but you may need to increase the liquid slightly.
Plant-based milk: I use plain organic soy milk but use your favorite. Soy milk makes a creamy pudding with a nice mouth feel, I’m guessing due to its fat content. If the one you choose is low fat and on the thin side, start with adding less than I list in the recipe and add more as you blend if needed.
Salt: Salt helps to bring out sweetness in desserts. Simply omit if you need salt-free.
Vanilla extract: I recommend pure vanilla extract.
Blender: I use a Vitamix, which is a high-powered blender that makes a silky smooth pudding. If you don’t have a high-powered blender, a regular blender will work just fine.
Remember, you can always adjust ingredients to your liking, or add more or less liquid if needed to achieve a pudding consistency.
I have kept this pudding chilled in the refrigerator for several days and it remained nice and creamy.
Recipe:
1 medium orange sweet potato and 1 medium white sweet potato, roasted, and peels removed. I recommend chilling these before making the pudding. When mashed, it’s about 1 cup (about 9 ounces or 254 grams).
1/2 cup soy milk or your favorite plant milk
2 T cocoa powder
1 T maple syrup
Pinch of salt
1 tsp vanilla extract
With my Vitamix, I add the soy milk first, then the other ingredients (helps the blender pull everything together easily). Blend till smooth.
Serve chilled topped with your favorite toppings if desired.
